Friday Finds

Social media can be such a time suck. I won’t say how many times I found myself staring pointlessly at a computer screen while my daughter’s napping – ignoring all the other productive things I could be doing – and that’s mostly because there are too many to count. On the more positive side, social media and networking can also open up a whole new world to you, filled with people, things and food that you were unaware that even existed. As a stay-at-home mom, I don’t get to venture out to find new things like I used to, and I rely primarily on my social feeds to deliver them right to me via my phone or computer.

Such is the case with all the finds I have for this week:

Sacramento is getting a Flea Market! Opening in January 2015, there is over 16,000 square feet of indoor and over 20,000 square feet of outside vending. There will be new and used stuff, produce, food and drinks and even live music on the weekends! Triple score! Oh, and the entrance, parking and even the concerts are all free. Yes. I’m so excited to see how this progresses and I’ve already got my list ready.

I am really digging how the craft beer scene in Sacramento is expanding, and this also includes craft beer bloggers. Hops and Dots is a beer blog run by Nat, who covers breweries in Sacramento and beyond. I was introduced to her blog by Beers in Sac by way of Facebook, and I’m so happy that I found it.

I spent a good while looking up sugar free cakes on Pinterest yesterday. Not because I’m on a sugar-free kick – that would mean I would have to give up the pints of ice cream and cookies I’ve been devouring lately – but because my brother can’t have sugar. And it happens to be his birthday next weekend, so I’ve decided to make him a cake. This might be the first nice thing I’ve done for him. I love this recipe from NellieBellie because I can use pumpkin (it calls for butternut squash or pumpkin – and pumpkin wins all, for me) and it’s all real ingredients – no fake sugar stuff over here! It looks super delicious.

Thrifty Thursdays: A Recipe

A couple days ago, one of my really good friends Allie came up for a visit from San Francisco. She’s gearing up for a semester in Thailand in August and this just might be one of the last times I see her before she leaves. We planned on hitting downtown Roseville for a few hours but when it came down to it, we really just went to Target and Sprouts to get stuff for dinner. I’m pretty sure I ruined Sprouts forever for Allie, but it was worth the trip.

We had Mahi Mahi tacos for dinner and they were delicious! Typically I’m not a huge fish fan, I usually just like salmon or if I do have tuna, I like it fried in tempura batter and rolled up all pretty for me in a delicious sushi roll. But they were really good! We had toppings like chopped up tomatoes, pineapple, jalapeno and bell pepper, sliced avocado, shredded cabbage and lemon. It was set up like a taco bar and we served ourselves.

After dinner was over, there were still a lot of toppings leftover so I decided to make a pineapple salsa out of it. And it turned out so surprisingly delicious and refreshing, I decided to share the recipe with you guys! I don’t have all the ingredients measured out as they were just what was left over, but the cool thing about salsa is that it’s pretty forgiving, so you don’t need exact measurements and you can add or extract what you want.

  • Chopped pineapple
  • Chopped tomatoes
  • Chopped bell pepper
  • Chopped cilantro
  • Chopped jalapeno
  • Sliced avocado
  • Squirt of lime for preservation

I just threw all the ingredients into the blender and hoped for the best! Mine turned out a little thick and chunky, which is perfect because that’s how I like my salsa. You can blend it more or less, depending on how you like your salsa. It’s a crisp and refreshing, and there’s some spice from the jalapeno and some sweet from the pineapple. Perfect for the summer!

I enjoyed it so much, I put it on my black bean tacos and used it as a dip for my chips the next day. Yeah, tacos are big around here.

Thrifty Thursdays: A Recipe

Ever since I met the coffee cake at Starbucks a long, long time ago, I have been a fan. Sweet, but not too sweet and moist and delicious. I love everything about it. A few months ago, when I was about to hit up the drive-thru Starbucks for a taste of that sweet delight, I made an instantaneous decision that changed my life forever. I swerved out of the drive-thru entrance and decided I would make one of my own.

I found this Pumpkin Spice Coffee Cake from Joyful Healthy Eats and I haven’t looked back. My taste-testing team (AKA my family) has crowned this the best dessert I’ve made thus far.

Here are the ingredients and you can get the full recipe by visiting Joyful Healthy Eats.

  • 2½ cups of all-purpose flour (I used whole wheat)
  • 1 cup of brown sugar
  • ¾ cup of sugar
  • ¾ cup of canola or vegetable oil (I used olive oil because it was all I had)
  • 1 teaspoon of pumpkin spice seasoning
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • ¾ cup of milk
  • 1 egg
  • ¾ cup of pumpkin puree
  • 1 cup of finely chopped pecans (I used walnuts – all I had)
  • 1 teaspoon of cinnamon
  • I also added dark chocolate chips, because I pretty much add them to anything

I have deemed this recipe thrifty because it has saved me from many a trip to Starbucks (or any coffee house for that matter), which has saved me a lot of money. I also had all the ingredients at my house (yes, I always have pumpkin puree, I don’t care what season we are in) so it was free for me to make.

I do want to look for a spring/summer inspired coffee cake recipe, but for now…this one is perfect. Especially warmed up the next day and served with a cup of coffee.

My Healthy Life: A Journey

my healthy lifeMy efforts in maintaining a healthy life have been very lackluster lately, to say the least. It’s a lot harder than I thought to take care of a home, a cute little baby (although at 15 months, she’s a big ol baby now), keep up decent grades and start a business. Squeezing in a workout AND not over-snacking when I’m stressed? Uh…yeah right.

So, in an effort to get back in a routine and not just completely lose it, I’ve decided to slowly add little things I could do that wouldn’t be hard to maintain and would be totally beneficial to me feeling and looking good. Because it’s not all about looking good for me. I need energy to get through my day and all that pizza – though wonderful and delicious – is slowin’ me down!

Last week, I decided to start way back from the beginning and follow the Clean Eating plan on the Gracious Pantry. I picked one thing to abstain from and so far, so good. This round: no fast food. I know, I know. I’ve done it before, but like I said…I’m starting fresh. From the beginning. I started last Wednesday, so it will be two weeks next Wednesday and then I will pick another thing to abstain from.

Like I have noted before, it’s all about convenience. If I have good healthy food to eat at home, then I’ll eat that. I only succumb to the pleasures of fast food if we have nothing to eat or I don’t feel like cooking. The only issue I ran into is that I made that goal a while ago to make all my food from scratch. Which means that if I want to just whip up something quick, that probably ain’t happening.

I have read before that if you work from home, you should treat it like you are going outside of the home to work. So, that means: showering, making your own lunch and mentally preparing yourself to work. Showering sometimes happens and sometimes doesn’t but I do like the idea of making my lunch ahead of time so I don’t have to worry about it when I’m in the middle of my workday.

I also found a new site called The Sweaty Betties. It’s run by fitness expert Danny J and the Facebook page describes the group as “irreverent group of women who are looking to get fit & have a whole lot of fun along the way.” There is a free 12-week lifting program that you can download on the website. It’s mainly geared toward the gym so I think I will have to wait on this until I get back into the gym, but it’s worth checking out!

And…look at these pancakes! I have really turned into a breakfast person now that I work from home because it fuels me and gives me time to sit and think about what I need to get done, and watch my daughter play and run around the house. Because that’s my favorite. These whole wheat pancakes from How Sweet Eats look delicious and they’re healthy to boot! I think I will need to give these a try really soon. Like tomorrow soon. I’m not a fan of greek yogurt but I’m sure regular yogurt would be just fine.

My Healthy Life: Banana-Blueberry Chocolate Shake Recipe

Any time I hear the words “healthy shake,” I cringe just thinking about the existence of protein powder in the drink. Protein powder is fine if that’s what you’re into, but why do you have to mess up a perfectly delightful beverage with it! So, when I saw that Laura from A Beautiful Mess posted a new healthy chocolate shake recipe, I was a little hesitant.

As it turns out, this chocolate shake had no sign of protein powder anywhere, and it was indeed – as described – healthy and delicious! I had a hankering for chocolate and knew that this was probably a better choice for me than the Girl Scout cookies I had been devouring for the last couple weeks.

I decided to add blueberries to mine, and since I was making it for someone else too (promise), I increased the portions.

  • 1 frozen, ripe banana 2 ripe bananas
  • 1 1/2 tablespoons unsweetened cacao powder 3 tablespoons of unsweetened cocoa powder
  • 1 tablespoon almond butter (crunchy or smooth) 2 tablespoons peanut butter (it’s what I had)
  • 1/3 cup unsweetened vanilla almond milk 2/3 cup coconut milk (again, what I had)
  • 1 1/2 cup frozen blueberries

I used my ghetto blender and for once – it didn’t threaten to blow up! I just blended for about two minutes until it was nice and smooth, and voila!

Since I used up the last of my peanut butter in recipe and I LOVE me some peanut butter, it’s the perfect time to make my own!

Recipe finds

I made a goal this week to make at least one thing completely from scratch. Then, I saw Greatist‘s Monday prompt to make a recipe I’ve never done before, or to try a new ingredient. So, I set out to find a recipe that would fit both challenges. Where else would I go but Pinterest?

IMG_1239 copyI found this recipe all over when I searched for “healthy cookies,” but it’s super mysterious and elusive so I couldn’t figure out who originally wrote it. So if anyone knows, please pass it on to me! I used this photo from the batch I made today and then I added the recipe. I was a little worried to try them out but they ended up surprisingly good! I suppose I fibbed a little on my goal since I didn’t make my own almond milk or apple sauce, but they are as close as I’m going to get for now.

Now, this is something I am pretty excited about! This sweet potato lasagna from MJ and the Hungryman looks absolutely delicious, and not too bad for you, either. All real, whole ingredients and I love anything that has the word lasagna in it. If I can get this past my family, I can do anything!
