Just Eat It: Pumpkin Coffee Cake

The other day, I used Sally’s Baking Addiction’s wonderfully delicious Pumpkin Chocolate Chip Oatmeal Cookies, and as per usual, they did not disappoint. Even my mom, who is a pumpkin hater, enjoyed one. The only problem with making something that calls for pumpkin puree is that if it doesn’t call for the entire can, and you’re dangerously close to grocery shopping day and therefore without foil to cover it, it gets gross after a couple days.

So after looking up pumpkin muffins and realizing I didn’t have cream cheese (again, dangerously close) and realizing I didn’t have a doughnut pan for pumpkin doughnuts or buttermilk for pumpkin doughnut muffins, I landed on a recipe I’ve used before and loved – Pumpkin Spice Coffee Cake from Joyful Healthy Eats. Her photos and step-by-step directions make it easy to follow early in the morning and before coffee.

And if you happen to have all the ingredients like I did (well, I had almost all of them), it’s free to make. And even if you have to pick up a couple, you’re still paying less for just one slice at any bakery or coffee shop. Here are the ingredients:

  • 2½ cups of all-purpose flour
  • 1 cup of brown sugar
  • ¾ cup of sugar
  • ¾ cup of canola or vegetable oil
  • 1 teaspoon of pumpkin spice seasoning
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • ¾ cup of milk
  • 1 egg
  • ¾ cup of pumpkin puree
  • 1 cup of finely chopped pecans
  • 1 teaspoon of cinnamon

The only change I made is that I didn’t have pecans and I was feeling adventurous, so I used the little remainder of walnuts I had and filled the rest of the cup with pumpkin granola. I was a little nervous about how the substitution would turn out, but I really like it!

One little square filled me up enough but didn’t make me feel too full and it had just enough spice to not overwhelm people who may not enjoy pumpkin as much as I/you do. This is actually the only pumpkin recipe I can get the majority of my family to eat, especially after the pumpkin explosion that happened last year.

22 Weeks: Oh boy!

It’s official. I’m over the halfway mark! And we’re having a boy! Of course I would be happy with two spoiled princesses, but I was very happy to learn that we are having a boy. I tend to swoon over baby clothes and room decor that is typically labeled as “boys” than “girls,” and we’re doing an eclectic room for him that leans toward vintage hot rod, an ode to his father.

His room is still full of my table, craft supplies, halfway finished projects and everything I need for school. I think we’ll start getting serious about decorating his room in November, when all of our house painting is done and my stuff has all been moved into the back house. So, I haven’t bought much for his room, but I did find this adorable sign at an estate sale!

unnamedI, of course, already have a Pinterest board going and I’m excited to share some inspiration on the blog tomorrow! For now, I’m just enjoying feeling him kick and move all around. He’s much more active than Cecilia was, and my body aches a lot more than it did with her, but I am not as anxious as I was the first go’round, and I have not caught myself reading any baby books or visiting webMD. I think that comes with the experience and comfort of knowing we survived this just a couple years ago.

Right now, the only thing my body doesn’t like is beef (which I’m not concerned about, since I’m not a big fan in the first place) but it does like all things sweet! I got this german chocolate bar from Sweet Simone’s Baked Goods at the Sacramento Antique Faire yesterday, and I carried it all around with me yesterday until I got home and could enjoy it with some ice cream.

I still have half saved for tonight’s treat. Because I fear going a night without chocolate.

Cecilia does not quite understand that she’s going to be a big sister, but she adores little babies. We’ll just have to see how she reacts to one that doesn’t leave. She has been moved to a toddler bed, as my belly was making it hard to pick her up from her crib and she’s got her ABC’s and Old McDonald down. It’s so fun (and a little scary) watching her grow.

Thrifty Thursdays

Today I woke up and realized that I did not write all week. I knew something felt a little funny. It’s a continuous process to get in a routine, and I’m trying again to write at least once a day. So, I’m starting fresh and sharing some cool things I found just surfing my Facebook news feed. All the times I’ve threatened canceling my account, I continue to keep it open because with every negative post I see, there is an explosion of inspiration. I’ve learned to just stay on my page and visit the pages I like than to get caught up in the drama of Facebook. Ain’t nobody got time for that.

So, today’s Thrifty Thursday post is a little mix of craft, food and skincare. There’s something for everyone!

First, can we all agree that this Macrame Plant Hanger from The Paper Mama is equally as cute as the planter? It only cost Chelsey $5 to make the plant hanger, and she shared her whole tutorial on Better Homes & Gardens. You can also find a tutorial for her planter in her e-book, which I purchased last year, and am totally in love with.

I love when Greatist posts stuff like 400+ Cheap and Healthy Recipes, because it challenges the preconception that eating healthy has to be expensive. As long as you have some fruit, veggies, protein and grain…you can make some pretty healthy stuff. They have it broken down it the basic categories – breakfast, lunch, dinner, soup and more. I’ve been getting pretty bored of my normal everyday eats, so I love finding new recipes to test.

I always save tutorials and recipes for sugar/salt scrubs, but I have yet to actually make one. What’s up with that? So I’m saving this DIY Citrus Salt Scrub recipe from Offbeat + Inspired in hopes that I’ll actually use it. I got some essential oils for the candle kit that I was obsessed with getting but still haven’t made anything. With it already feeling like the middle of summer outside and spending my days watching my daughter float around in our inflatable pool, my skin has been angry with me. So this might just give it the love it needs.

And what is more perfect in the summer heat than ice cream?! Especially this Dark Chocolate Strawberry Ice Cream recipe from Love & Olive Oil. You will need an ice cream maker to make this, so if you have one already…then check out this recipe. I pretty much love anything with dark chocolate and strawberries in it, so I need to buy an ice cream maker to make this. Not very thrifty, but hey…

IMG_2252And finally, check out this children’s china cabinet I got from the Sacramento Antique Faire on Sunday! It was marked down from $50 to $30 and it just needs a little love before it’s perfect! Cecilia already has a bunch of kitchen trinkets to fill it up with so she can work on her masterpiece while I’m in the kitchen.

My Healthy Life: Banana-Blueberry Chocolate Shake Recipe

Any time I hear the words “healthy shake,” I cringe just thinking about the existence of protein powder in the drink. Protein powder is fine if that’s what you’re into, but why do you have to mess up a perfectly delightful beverage with it! So, when I saw that Laura from A Beautiful Mess posted a new healthy chocolate shake recipe, I was a little hesitant.

As it turns out, this chocolate shake had no sign of protein powder anywhere, and it was indeed – as described – healthy and delicious! I had a hankering for chocolate and knew that this was probably a better choice for me than the Girl Scout cookies I had been devouring for the last couple weeks.

I decided to add blueberries to mine, and since I was making it for someone else too (promise), I increased the portions.

  • 1 frozen, ripe banana 2 ripe bananas
  • 1 1/2 tablespoons unsweetened cacao powder 3 tablespoons of unsweetened cocoa powder
  • 1 tablespoon almond butter (crunchy or smooth) 2 tablespoons peanut butter (it’s what I had)
  • 1/3 cup unsweetened vanilla almond milk 2/3 cup coconut milk (again, what I had)
  • 1 1/2 cup frozen blueberries

I used my ghetto blender and for once – it didn’t threaten to blow up! I just blended for about two minutes until it was nice and smooth, and voila!

Since I used up the last of my peanut butter in recipe and I LOVE me some peanut butter, it’s the perfect time to make my own!

Yo Momma Monday: Alison Butler

IMG_0509Meet Alison Butler, 31, from Newfoundland, Canada. She is a beautiful mama who recently launched her shop The Petit Cadeau, which is centered around celebrating and creating traditions. She creates handmade heirloom celebration countdown calendars for birthdays, Christmas, anniversaries and other special occasions. She loves to create and support handmade, and is usually happiest with a cup of tea and a book.

Alison cultivated her love for creating thoughtful gifts since she was a child and made homemade gifts or cards for her family, something that she says was fostered and encouraged by her mom. She took creative extra-curricular classes, such as art, pottery and cartooning but never took art in high school, something she still regrets.

“As an adult, it’s my “escape” – I love to make things, it calms my mind and body.”

As a mother to a  2 1/2 year old who works a full-time job aside from creating, she admits that she is constantly trying to find a balance, and that nothing ever really feels normal. (I second that notion). She usually spends a few hours each night creating and blogging, after her daughter falls asleep and tries  not to schedule anything on the weekend so her family can enjoy each other.

Alison credits motherhood for her inspiration to create things for children and to give more thought about the way she does things – like keeping celebrations simple and thoughtful. Most importantly, being a mom has taught her to slow down.

“Everywhere I look, I see parents trying to do everything bigger and better. It seems to stress most people out.,” she says. “Why is it really necessary?  It’s not. My message is always – they won’t remember the gift (most of the time) It’s the memories and experiences that are important.  I want my daughter to remember feeling special.”

It was this idea that prompted her thoughtful gifting manifesto, a beautifully and thoughtfully written post about why she buys handmade, and/or from local businesses. Never a last-minute shopper, she keeps a birthday book and starts planning and preparing well in advance, thinking about what that person would really love.

She also started Thoughtful Celebrations, a monthly e-mail newsletter that focuses on just that – planning thoughtful celebrations. Recipients are privy to recipes and tips for throwing parties and different handmade shops to support. They also get special coupons and previews to new projects she’s working on.

“I think I have a lot of internal drive to keep working at something I love, even when some days don’t involve anything creative and lot’s of the time I feel completely exhausted.  I’m building something that makes me happy and joyful.”

After a Twitter chat with Oh My Handmade – the amazing handmade community that she belongs to – she wanted to do something fun to promote handmade busineeses. Since she also happened to be training for the NYC 2012 Marathon, and decided to name her series The Handmade Marathon. She selected 26 handmade business participants, one for each mile of a marathon. The marathon was subsequently cancelled, but since the series became so popular, she decided to keep it going.

“I feature one handmade business per month, and changed my interview questions to reflect the direction my blog is heading.”

Alison gets a lot of her inspiration from beautiful magazines and all of her favorite blogs. She reads Oh My Handmade daily and also loves Susannah Conway and Alisa Burke. One of her favorite shops is Herriott Grace – a father and daughter team who started selling gorgeous hand-carved wooden objects online five years ago – and Alison is a proud owner for the cloud cookie cutter!

The personal touch is Alison’s favorite thing about the handmade community and she loves being able to connect with others through Oh My Handmade and share her interests and passions with like-minded people.

“There is a real THRIVING supportive community around handmade.  It’s wonderful to be a part of that.”

As an only child, Alison says that she embraces quiet and enjoys sitting in coffee shops to sip and read. She unwinds at local yoga classes and is excited about a new studio she just found and she and her husband recently took a chocolate making class. FUN! She also loves to craft in her downtime and loves learning new trades. One craft she hasn’t learned but would love to try is letterpress.

“I haven’t found anywhere locally where I could learn, but it just looks so beautiful and interesting. Knitting is also high up on my “must-learn” list,” she says.  “I’ve tried a lot of different things over the years – most recently bookbinding/making, wool felting and art journaling.  I’ll try almost anything once!”

Alison says that her favorite thing about running her own business is interacting with new people and collaborating on projects and posts – and she has some great ones in the works in late 2013 and early 2014! She hopes that her blog will inspire people to make small, thoughtful changes. She wants people to feel inspired to make a gift when they might feel like they don’t have the talent and she wants people to start simple family traditions that will last a lifetime.

“Inspired to think about where the money goes and instead of buying five plastic toys, invest in one beautiful  toy – something that’s quality, made by hand.  Most importantly, I want you to feel like my blog is for you, because it is!”

As a mom, Alison works slower on her projects than she did in the past. She’s constantly planning new ideas for the shop and has  several in the works right now and she says she is learning to embrace the newer, slower pace of finishing projects or getting things completed.

“My hope for the future is to be able to incorporate creativity more into my everyday life.  I want to continue to slow down, listen, be present and enjoy my family to the fullest.”

One of my favorite treats growing up was Rice Krispie treats. I loved how they were both sweet and salty, and didn’t have chocolate. I always ate my mom’s chocolate chip cookies, but I wasn’t in love with chocolate until I got pregnant. Then it was all over. When I was pregnant, I went insane for Almond Joy and Mounds. It was crazy. I literally bought the Halloween bag of Almond Joy and kept them for myself. Luckily it was Halloween and I was super pregnant, so nobody dared question me. Then, when all the Halloween candy went on sale, I was in an Almond Joy/ Mounds wonderland.

When we went to the grocery store yesterday, I felt inclined to buy Mounds since I was starting my “bangin’ body challenge” today (more about that later), and I wanted to indulge one last time. While I was enjoying my moment of bliss, I was thinking of treats I could make with coconut. And here is what I found….
