Just Eat It: Pumpkin Coffee Cake

The other day, I used Sally’s Baking Addiction’s wonderfully delicious Pumpkin Chocolate Chip Oatmeal Cookies, and as per usual, they did not disappoint. Even my mom, who is a pumpkin hater, enjoyed one. The only problem with making something that calls for pumpkin puree is that if it doesn’t call for the entire can, and you’re dangerously close to grocery shopping day and therefore without foil to cover it, it gets gross after a couple days.

So after looking up pumpkin muffins and realizing I didn’t have cream cheese (again, dangerously close) and realizing I didn’t have a doughnut pan for pumpkin doughnuts or buttermilk for pumpkin doughnut muffins, I landed on a recipe I’ve used before and loved – Pumpkin Spice Coffee Cake from Joyful Healthy Eats. Her photos and step-by-step directions make it easy to follow early in the morning and before coffee.

And if you happen to have all the ingredients like I did (well, I had almost all of them), it’s free to make. And even if you have to pick up a couple, you’re still paying less for just one slice at any bakery or coffee shop. Here are the ingredients:

  • 2½ cups of all-purpose flour
  • 1 cup of brown sugar
  • ¾ cup of sugar
  • ¾ cup of canola or vegetable oil
  • 1 teaspoon of pumpkin spice seasoning
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • ¾ cup of milk
  • 1 egg
  • ¾ cup of pumpkin puree
  • 1 cup of finely chopped pecans
  • 1 teaspoon of cinnamon

The only change I made is that I didn’t have pecans and I was feeling adventurous, so I used the little remainder of walnuts I had and filled the rest of the cup with pumpkin granola. I was a little nervous about how the substitution would turn out, but I really like it!

One little square filled me up enough but didn’t make me feel too full and it had just enough spice to not overwhelm people who may not enjoy pumpkin as much as I/you do. This is actually the only pumpkin recipe I can get the majority of my family to eat, especially after the pumpkin explosion that happened last year.

Hey I finished a project!

Yard sales are good for the soul, and for the house. I should have one every month. My mom is having one next week and I cleared out so much stuff that I was hoarding to prepare for the sale. Because of that, I found a bunch of fabric that I love and can’t wait to work with, and a lot of my old concert and band tees that I wanted to make a quilt with long, long ago. That dream is a little dead now…but I have a few ideas for what I want to do with them.

I also finally finished my chalkboard project, and actually baked something. I got an oatmeal cookie recipe from Sally’s Baking Addiction and they turned out so wonderful and moist! I substituted the raisins for blueberries since I was out of raisins, and while her recipe says to bake for 10 minutes, I had to bake for 15 since my oven is a little funky.

IMG_2497First, I took a simple frame I got from the thrift store for $1. Then I painted it with some acrylic paint that had been left in my car for wayyy too long. So, naturally that exploded everywhere. Luckily, I happen to buy a lot of teal paint so I had some back-up and after A LOT of cleaning, I was able to resurrect my project.

IMG_2555Since the frame had an indented line on it already, I used a gold paint pent to do the line and left one side blank to add some fancy stuff to it. Unfortunately, the paint pen was too thick and not I couldn’t simply wipe it when I made a mistake. So, I painted over it and chose to do a yellow line. The yellow ended up not working since it was so light and I had to paint multiple coats, which made it look thick and chunky…not the look I was going for.

IMG_2561So, after I cleaned that up a little…I found a sort of salmon pink that I liked, and covered the yellow with that. I chose to do little diamonds on the side I left blank. They are by no means perfect, but they will do!

IMG_2652While that was drying, I used a few coats of chalk paint to paint the backboard. And ta-da! It’s a chalkboard!

Recipe finds

I made a goal this week to make at least one thing completely from scratch. Then, I saw Greatist‘s Monday prompt to make a recipe I’ve never done before, or to try a new ingredient. So, I set out to find a recipe that would fit both challenges. Where else would I go but Pinterest?

IMG_1239 copyI found this recipe all over when I searched for “healthy cookies,” but it’s super mysterious and elusive so I couldn’t figure out who originally wrote it. So if anyone knows, please pass it on to me! I used this photo from the batch I made today and then I added the recipe. I was a little worried to try them out but they ended up surprisingly good! I suppose I fibbed a little on my goal since I didn’t make my own almond milk or apple sauce, but they are as close as I’m going to get for now.

Now, this is something I am pretty excited about! This sweet potato lasagna from MJ and the Hungryman looks absolutely delicious, and not too bad for you, either. All real, whole ingredients and I love anything that has the word lasagna in it. If I can get this past my family, I can do anything!

Weekly Wishes #8

 

weekly wishes 8Since my daughter has learned to walk, she has also learned to scoot her way off of anything she can scoot off – laps, our couch and sometimes even arms. So when she cried every time I put her down, I knew something was up. Turns out she was sick – and has been since last Wednesday. Therefore – my life has been full of cuddling, hugging, comforting, sleeping and doing homework, making gifts and cleaning when she naps.

This little break from blogging and social media has been refreshing and has given me a good outlook on what I want my life to be. I tend to sign myself up for every creative project under the sun, only to feel beaten down and exhausted when I never seem to get the results I want from them. This has seriously effected my wishes for this week.

Let’s just say that I did not get any of my wishes done last week. But I’m not going to worry about it. I had a little one who needed me more than anything else did. Now that she’s feeling better, it’s a whole new week. My business and fitness goals will clearly have to wait until after Christmas because making gifts at home is a whole lot more work than I thought. But it has pushed me to be creative every day, and I love it.

This week:

Tuesday: Finish Addie and Elena’s gifts (painting – my absolute favorite!). Get them wrapped and ready to go!

Wednesday: Finish my parents gifts (trying something new for my very first time. I’m excited to share my project after Christmas). Get those bad boys ready to go!

Thursday: Start canning (apple butter, pumpkin butter and sugar-free jam for my brother!). Start working on the rest of Sadie’s and Jackson’s gifts (screen printing – my other favorite!)

Friday: Do finishing touches on gifts that need them. Continue canning

Saturday: CANNING, CANNING and more CANNING! Finish the beanie.

Sunday: Make sure everything is wrapped and all of my canning is done.

Monday: Bake-a-thon (gingerbread cupcakes and a whole lot of cookies!) starts!

This list helps me put the week into perspective and by splitting up my projects like this, I think I can actually do it! My posts from now until the end of the season will be more Holiday inspired, since obviously that’s all on that’s on my mind right now.

Once all this is done, I will have a little more than a month off of school and I’m planning on working on my creative business ventures and really getting things done so I will not feel so overwhelmed when school starts. Less creative projects, more focus on the ones I already have.

My Healthy Life: A Journey

my healthy lifeSo, today is my birthday! Hooray! It’s also my goal date for my weight loss, and I’m about 14 lbs from it. Obviously, I’m not going to lose 14.5 lbs today, but that does not mean that I’m not proud of what I have done. Although I have cheat days, I focus on eating whole, clean food that makes me feel good when I eat it. I have started a yoga routine, and sometimes I’m even able to fit in a work out.

I’m able to wear some of my old clothes, and I was able to store some clothes that were just too big, and that feels so good. Sometimes when I’m showing Cecilia herself in the mirror, I catch a glimpse of myself and I’m comfortable with what I see. So even though the scale may not be showing the results I was hoping for, I can already see the improvement in my confidence and personality.

And it’s not just the weight loss. I feel a lot healthier than I did before. I can chase my daughter all over the backyard and not feel winded. I have learned how to bake and cook because of this journey, and I have saved my family a lot of money because we don’t go out to eat all the time like we used to. I have done it all just by eating better and working out. I did not take a magic pill, or limit myself to shakes. No crazy diets…just eating better and remaining active.

Wanting to step up my game a little, I decided to take a Core Strength Yoga Class from Sadie Nardini. Let’s just say that it was a 30 minute class, and I lasted 15 minutes. I was happy to hear my daughter cry when she woke up, so I could pretend that’s why I had to stop. If you want a yoga class to make you cry, check her out. I’m pretty sure I threw my back out, but I’m going to try it again this weekend to see how far I can get without injuring myself.

Yesterday, I wanted to find a low-impact workout since I was still feeling messed up from that yoga class and walking over 2 miles to find the Sacramento Antique Fair (one could say I really love antiques), so I found a good pilates class…and I think I’m in love. The class was a 15 minute beginner class so it was perfect for me, and it’s through Pilatesology. You can sign up for $19 a month and can opt for a 10 day free trial if you want to test drive before you buy.

I also made this pumpkin turkey chilli from The Gracious Pantry, but used potatoes instead of turkey. I added a couple cups of water to help soften the potatoes, but that is really up to you. I absolutely loved the way it turned out. My soups usually lack flavor, but not this one. The coconut milk was perfect for this recipe, and added a lot of spice and flavor. Next, I’m going to make it hotter by adding some chili peppers.

Meet the Maker: Amanda Wright of Wit & Whistle

As part of my creative business journey, I have included another series on my blog. It’s called Meet the Maker and it’s where I share awesome stories from some of my favorite makers. This is to help inspire and motivate, but to also help promote the handmade community. I believe that if we all come together to support and promote each other, amazing things can happen.

And just by happenstance, the very first maker in my Meet the Maker series is the lovely Amanda Wright from Wit & Whistle. Not only does she have the best name in the world, she also prints on anything from pillowcases, hand towels, greeting cards, journals and more.

Amanda, 29, graduated from the North Carolina State College of Design in 2006. There, she learned a valuable lesson: don’t give up if something doesn’t turn out right the first time.

Every project goes through many drafts before completion. Design is a process with many steps, and not all of those steps are nice to look at!

Ain’t that the truth.

After graduation, she got a job at a design firm and while she loved where she worked, she wasn’t allowed very much creative freedom. While she had a few clients that were more open-minded, others weren’t as cooperative, which is something she admits she didn’t learn about in design school.

They’ll slap a big ugly logo onto your beautiful design and ask you to rearrange your masterpiece until it’s unrecognizable. Each time that happened it was a painful stab to my creative spirit.

She started designing cards in her free time, under the name Spawn Studio. To her surprise, her card sales took off, and her husband Daniel encouraged her to quit the design firm and work on her greeting card business from home. It took a few months of him pushing her, but she finally made the leap in 2009.

While she’s not a fan of all the math involved with running your own business, she does appreciate the flexible hours.

I relish the freedom to work on what I want to, when I want to. After all, the creative urge doesn’t always strike between the hours of 9 and 5!

With more time to create when and what she wants, she keeps a running list of ideas in her head. Then when she is in a creative mood, she will pick from the list.

I do most designing in my sketchbook. Then, I scan my drawings into the computer and add color digitally. I started out printing, folding, and cutting all my products myself, but now I work with a local printer to produce most of my goods. That way I have more time to create!

Making her own schedule allows her a few creative brain farts from time to time.

Sometimes there will be a multiple week stretch in which I wonder if there’s even a speck of creativity left in my body. Usually the cure is to step away and do something else for a while. I might repaint a room of the house, bake something, snap some photos, or come up with a DIY project for my blog. When I get back to designing, my brain fart has usually dissipated.

Brain fart or not, Amanda is motivated by her desire to constantly improve. As a self-proclaimed perfectionist, she is never completely satisfied with her work, which drives her to keep practicing.

It’s cliche, but I want to be the best I can possibly be. I want to make the most of this amazing opportunity to pursue my dreams.

A Regina Spektor fan, Amanda will sometimes listen to music while she is designing, but her studio time is usually spent listening to podcasts, like Relic Radio‘s rebroadcast of science fiction radio shows from the mid 1900s.

They’re cheesy in an endearing way. They always make predictions about the distant future (1997), and they’re always way off. (We are supposed to be living on Mars with robot slaves by now.)

Amanda would describe her work as “pretty with an unexpected touch of crassness,” and sometimes, the crass can be a little too unexpected, like she learned with her biggest card flop – a Mother’s Day card for new moms.

The front said something like “POP, CRACK, GROAN, SNAP, RIIIPPPP…” and the inside said “It’s a good thing you have nice birthing hips.”

Always wanting to improve, Amanda is taking a crash course in Calligraphy with Molly Jacques on Skillshare. She is also working on spiral notebooks, her 2013 holiday line, notepad designs and even her Valentine’s Day cards. With all this going on, she admits she has a hard time relaxing.

Even when I’m watching TV I have my sketchbook in hand. My husband and I try to go on a big trip every year or so—preferably to someplace where I can get a new stamp in my passport. It’s nice to force myself out of my comfort zone and experience something totally new.

Amanda says that being a small business owner has taught her not to over-think it. She didn’t follow the normal process of writing up a business plan and getting everything figured out before setting up shop. She slowly started putting her work out there, and it has continued growing.

Maybe that’s not the smartest business advice, but it has worked pretty well for me. If I had tried to figure everything out in the beginning, I would’ve been overwhelmed and given up!

Yo Momma Monday: Annalise Sandberg

Every time I bake something new, I think “dang…I could probably be a baker.” Then I see what other people are working with, and I realize every single time that I still have a long ways to go. I spend a lot of time looking at dessert recipes for inspiration, and what I don’t see a lot of are baking tools and tips.

Then I found Completely Delicious a while back when I wrote a Weekly Treat post featuring grapefruit recipes. I found Annalise’s pink grapefruit cupcakes and my heart sang a little tune. But she offers a little something more than recipes, she also shares baking tools and baking tips – like, how flour is used in baking. I mean, I know I need to use it every time I bake, but I couldn’t really tell you why.

I loved everything she had to share, so I hunted her down to find out more.

What was the first cookbook you bought?
My mom gave me my first cookbook, a Betty Crocker cookbook, when I left for college. I used it exclusively for years. I think the first one I purchased was baking cookbook on clearance at Barnes and Noble.
Where are you favorite places to purchase cookbooks?
I usually do most of my book shopping online through Amazon.

Do you remember your first baking experience? If so, what did you make and how did it turn out?
I was 8 and I baked chocolate chip cookies all by myself. I was so excited when they were done that I forgot to put oven mitts on before pulling them out of the oven. Ouch!

What is your favorite thing to make?
I love to bake and assemble layer cakes.

What do you get the most requests for?
My brown butter chocolate chip cookies, they’re a family favorite!
What made you decide to start a blog?
I was very inspired by other baking blogs like Smitten Kitchen and Joy the Baker, and so I decided to start my own.

Does your son help you bake?
He’s a little young to really do much helping with anything other than eating (which he loves to do). I look forward to baking with him in the future.
You have a lot of baking tips on your page (which I love), why did you decide to share all of this?
It’s not just about following a recipe, it’s knowing how and why recipes work that leads to the most success in baking. My goal is to share what I know with others with the hope that my readers will bake a better cake or tastier cookie.
What are your other passions?
When I’m not in the kitchen, I love to spend time outdoors hiking, camping, and swimming.

How often do you bake?
I bake several times a week. I’d like to bake daily but our small family can’t keep up with all the goodies!

What do you like to do on your down time?
I love to curl up with a good book, movie, or TV series on Netflix.

No big project on the horizon right now. My focus is on continuing to share great recipes and providing more baking tips.
